Chow Mein

Ingredients:

1 lb egg noodles
4 tsp vegetable oil
1 onion, thinly sliced
2 carrots, cut into thin sticks
1/4 lb white mushrooms
1 1/2 cups snow peas
1/2 cucumber, cut into sticks
1/4 lb spinach, shredded
2 cups beansprouts
2 tbsp dark soy sauce
1 tbsp sherry
1 tsp salt
1 tsp sugar
1 tsp cornstarch
1 tsp sesame oil

Didn’t have the mushrooms or bean sprouts. This turned out ok. I think I didn’t put oil in the noodles so they got sticky quick.

Indian Bean Soup

Ingredients:

4 tbsp vegetable oil
2 onions, peeled and chopped
8 oz potato, chopped
8 oz parsnips, chopped
8 oz turnips, chopped
2 celery stalks, sliced
2 zucchini, sliced
1 green bell pepper
2 garlic cloves, rushed
2 tsp ground coriander
1 tbsp paprika
1 tbsp mild curry paste
5 cups vegetable bouillon
1 1/2 cups black eyed peas
chopped cilantro to garnish

I didn’t have paprika, turnips or black eye peas. Used kidney beans instead. Used curry powder instead of paste. In spite of all of this, this turned out really good. It was somewhat similar to the curried parsnip soup I prepared on 2/21/2008. Served with artisan bread with real butter and fresh thyme.

For dessert:

I made vanilla bean ice cream…

1 1/2 cups whole milk
1 1/2 cups heavy cream
1 whole vanilla bean
2 large eggs
3 large egg yolks
3/4 cup sugar

Wow, I’ve never worked with an actual vanilla bean before. They’re expensive. I bought two beans in a jar called “Madagascar Vanilla Beans” for nearly $20US. You have to slice the bean lengthwise and then using the back of the knife you remove the paste inside. It’s very aromatic and insanely delicious. This recipe was a bit difficult to follow since it requires cooking ingredients at certain temperatures. I just bought a digital food thermometer so that was helpful. Tastes very good!

Veggie Pizza

Ingredients:

Dough:

1 tsp active dried yeast
6 tbsp lukewarm water
1/2 tsp sugar
1 tbsp olive oil
1 1/2 cups all-purpose flour
1 tsp salt

Sauce:

1 small onion, chopped
1 small red bell pepper, chopped
1 garlic clove, crushed
2 tbsp olive oil
1/2 lb tomatoes
1 tbsp tomato paste
1 tsp brown sugar
2 tsp fresh basil
1/2 tsp dried oregano
1 bay leaf

Didn’t have basil or oregano. Used 2 bay leafs. This recipe takes a long time to make. Would be better to have some dough on hand. It takes an hour for the dough, a half hour for the sauce and then a half hour to cook the pizza. Pizza was topped with pine nuts, fresh spinach, blocks of smoked mozzarella cheese, finely sliced garlic, sliced cipoletta onion, and kalamata olives. Wow, this is really a great recipe. It will make your entire house smell like an old Italian restaurant. :-D

Chow Mein

Ingredients:

2 stalks of celery, chopped
1 chinese eggplant, chopped
1 carrot chopped
1 onion, chopped
2 cloves of garlic, chopped
3 cups of vegetable bouillon
wheat noodles
1 square of fried tofu
1/4 cup cooking sherry
1 tbsp soy sauce
topped with toasted sesame seeds

Served over Jasmine rice.

I improvised this recipe from scratch based on available ingredients. It was surprisingly delicious!

Curried Parsnip Soup

Ingredients:

1 tbsp vegetable oil
1 tbsp butter
1 red onion, chopped
3 parsnips, chopped
2 garlic cloves, crushed
2 tsp garam masala
1/2 tsp chili powder
1 tbsp all-purpose flour
3 1/2 cups of vegetable bouillon
grated zest and juice of 1 lemon

Wow, very interesting flavor! The spiciness is balanced out nicely by the the sweet chunks of delicious parsnip. I only had two parsnips on hand so the soup could have used one more for sure. Hope to make again some day.

Garlicky Spaghetti

Ingredients:

1/2 cup olive oil
3 garlic cloves, crushed
1 lb fresh spaghetti
3 tbsp coarsely chopped fresh parsley

Really simple recipe. I added pine nuts and cherry tomato halves to liven it up a bit and then topped with Parmesan cheese. Quite tasty!

Sweet Potato and Onion Soup

Ingredients:

2 tbsp vegetable oil
2 lb sweet potatoes, diced
1 carrot, diced
2 onions, diced
2 garlic cloves, crushed
2 1/2 cups vegetable bouillon
1 1/4 cups unsweetened orange juice
1 cup low-fat unsweetened yogurt
2 tbsp chopped cilantro to garnish

I should have cooked veggies slightly longer. I used sweetened yogurt and orange juice since that was all I had on-hand. Interesting taste. I need a citrus peeler/zester to get better wedges of orange on top. The soup is citrusy and sweet. Not one of my favorites though my girlfriend professed to love it and quickly ate all the left0vers.

Veggie Burritos

Ingredients:

Spinach flour burrito shells, heated in pan
Fresh cilantro
1 onion
1 avocado
1 can of black beans
2 cups of grated cheddar cheese
salsa
2 fresh tomatoes,  sliced

Mr. Foodzie took the night off and got this lovely dish for all of his past culinary efforts.

For dessert:

Strawberry Frozen Yogurt

3 cups of vanilla yogurt
1/2 cup of milk
1/2 cup of sugar
1 1/2 cups of fresh, cut strawberries

Wow, this was great! It didn’t keep in the freezer very well so be sure to eat it all up soon after you’ve prepared it. :-D

Pasta and Chili Tomatoes

Ingredients:

10 oz spaghetti
3 tbsp peanut oil
2 garlic cloves, crushed
2 shallots, sliced
1/4 lb green beans, sliced
1/4 lb cherry tomatoes, halved
1 tsp chili flakes
4 tbsp crunch peanut butter
2/3 cup of coconut milk
1 tbsp tomato paste
sliced scallions to garnish

I used chili powder instead of flakes. Darn, I didn’t cook the pasta quite long enough before throwing into the stir-fry. It was very “al dente”. Could have used a minute or two more in the boiling water methinks. In spite of all that, this dish was still quite good. The peanut chunks are a nice touch. The fresh green beans are sublime.

Butternut Squash Stir-Fry

Ingredients:

2 lb butternut squash, peeled
3 tbsp peanut oil
1 onion, sliced
2 cloves garlic, crushed
1 tsp coriander seeds
1 tsp cumin seeds
2 tbsps chopped fresh cilantro
generous 1/3 cup coconut milk
1/2 cup water
2/3 cut salted cashew nuts
lime zest

This is turning out to be a favorite. Had some left-over squash and just enough cashews and this dish is so simple to prepare, could resist making it one more time.

For dessert:

Home made ice cream

ingredients:

2 tsp pure vanilla extract
3 cups of heavy cream
1 cup of milk
3/4 cup of sugar

Added broken Oreos. Delicious!
